    We are a small, boutique olive farm producing very limited quantities

    of the highest quality organic Extra Virgin Olive Oil (EVOO).

    The hot, dry season has rendered a wonderful oil with an intense,

    spicy taste and emerald green color.

    Gabbiano Uno is the harvest of a long-dormant orchard located in a Chianti micro-climate

    especially well-respected for it’s superior oil production.

     

    A blend of 40% Leccini, 40% Frantoiani and 20% Morellini varieties, our olives are hand-picked and processed within hours at a frantoio just moments from the trees.

     

    Rich and nutty with a smooth start and very sharp finish, our oil has a big nose with abundant notes of eucalyptus, roasted pine nuts and warm olives.
